A garlic scape is the thin, often curly, green stem that grows out of the top of a garlic bulb. It's only present in the hardneck family of garlic species — a type of garlic that grows in northern climates.

Right as the scape is beginning to curl, it's ready to harvest. Locate where the leaves of the garlic plant end and the stalky scape begins. You can use your hands to snap the scape off.
